  1. Pat the lamb chops dry with paper towels. Season generously all over with salt and pepper. Let sit at room temperature for 20 minutes for even cooking.
  2. Heat olive oil in a heavy skillet (cast iron is ideal) over medium-high heat until shimmering and nearly smoking.
  3. Add the chops and sear undisturbed for 3 minutes until a deep brown crust forms. Flip and sear the other side for 2 minutes.
  4. Reduce heat to medium. Add butter, garlic, rosemary, and thyme. Tilt the pan and spoon the foaming butter over the chops for 1-2 minutes until they hit your desired doneness.
  5. Transfer to a plate, tent loosely with foil, and rest 5 minutes. Serve with lemon wedges.
